The long-drawn lockdown gave us enough time to cook almost every recipe we knew of. Now that the lockdown has extended further, it’s time to try out some new recipes to add variety to your daily menu. There’s so much we can do with common foods in our kitchen. Peas (matar) is used extensively in Indian cuisine, and vadi is combined with aloo to make delicious sabzi, or added to rice to make pulao. These two foods can be combined to make this tangy, spicy sabzi that is sure to win you over.
Nimona is a popular dish in Uttar Pradesh. UP style matar ka nimona has matar mixed with a variety of spices. Here, we are adding vadi to instil some nutty flavour of vadi and also some density to the curry. Don’t forget to soak your frozen matar in water for some time before using it.
Cook ground matar and vadi with sliced onions, fresh tomato puree, matar paste, bay leaves, and spices like coriander powder and ginger-garlic paste. Pair this flavourful sabzi with roti, naan, paratha or rice.
