This paneer-soya sabzi is extremely healthy and delicious.
We all realise how important it is to consume all essential nutrients on a daily basis. However, in the battle of taste and health, oftentimes taste wins and we give in to our temptation to go for junk foods with minimal nutritional value. Wouldn’t it be great if we could get a meal that offers both health and great taste? This paneer-soya sabzi is just what your need. Two protein-rich foods – paneer (cottage cheese) and soya chunks come together to make this spicy and delicious sabzi that you can include in your regular roti, rice and sabzi affair.

Paneer and soya also complement each other perfectly in this dish, which is enhanced with lots of flavours from spices, onions, tomatoes, curd, lemon and fresh coriander leaves.

Paneer-Soya Sabzi Recipe –
1 cup soya chunks
1 cup paneer cubes
1 large onion
1 teaspoon minced garlic
1 teaspoon grated ginger
1-2 tbsp curd
Half inch cinnamon stick
1 bay leaf
1-2 slit green chillies
Salt and red chilli powder to taste
Half teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon coriander powder
Juice of half lemon
Step 1 – Soak soya chunks in water before starting the cooking process.
Step 2 – In a kadhai, heat some ghee, add all the whole spices and roast for around 1 minute. Add garlic, green chilli and onions and cook till onions turn brown.
Step 3 – Add tomatoes, ginger, salt, red chilli powder, coriander powder and turmeric powder.
Step 4 – When tomatoes turn mushy and start leaving ghee on the sides, add curd and saute for around 1 minute.
Step 5 – Drain water from soya chunks and add to the onion-tomato mixture.
Step 6 – Cover the kadhai and let soya cook (10-15 minutes).
Step 7 – Next, add paneer cubes and stir well. Turn off the gas.
Step 8 – Sprinkle lemon juice and mix well.
Step 9 – Garnish with coriander leaves and serve.
