Indian meals normally consist of roti and rice paired with dry sabzi and dal or a curry dish. We have always seen dal and curried sabzi as two different dishes. This recipe combines the two to make dal curry, with not just ordinary dal but sprouted dal. Dal is a highly nutritious food, being extremely rich in proteins. Protein is a vital macronutrient required by the body for proper functioning. Other than providing strength to muscles and infusing energy in the body, proteins also help keep the body sated. If dal is a great source of proteins, sprouted dal is considered even better.

Sprouting is basically the process of germination. Grains or lentils are soaked in water and then left to dry out till they turn into a plant. This process enables all the nutrients in the lentils to become more accessible and easily absorbed in the body.

Sprouting brings out all the nutrients of dal. 

Sprouted Dal Curry Recipe –

Ingredients – 

Half cup whole moong dal (green lentil)
1 onion, chopped
2 tomatoes, chopped
Half tsp mustard seeds (rai)
Half tsp cumin (jeera)
A pinch of asafoetida (hing)
1 tbsp ginger-garlic paste
1 green chilli
Salt and red chilli powder to taste
Half tsp turmeric powder (haldi)
1 tsp coriander powder (dhaniya)
Half tsp garam masala powder
Half tsp dry mango powder (aamchur)
Coriander leaves for garnishing

Method – 

Step 1 – Sprout the dal by soaking it in water for around 8 hours and then covering it in muslin cloth for another 8 hours after draining the water, till it sprouts. 
Step 2 – Heat oil in a pan, add hing, rai and jeera till they splutter. 
Step 3 – Add onions, ginger-garlic paste and green chillies and cook till onions turn brown. 
Step 4 – Add tomatoes along with haldi, red chilli powder, salt and amchoor. 
Step 5 – When the tomatoes start leaving oil from the sides, add sprouted dal. Add some water and let it simmer for around 15 minutes. Garnish with coriander leaves. 

Serve sprouted moong dal curry with roti, rice and chutney and enjoy a healthy and filling meal. You can also include this dish in your protein-rich diet for weight loss.
