Missing street-style noodles? The noodles dish that we used to get from neighbourhood Chinese vans or Chinese eateries before lockdown is just impossible to replicate at home. Those full-of-flavours noodles made for the perfect evening snack or even a light meal for lunch or dinner. Basic noodles are quite easy to make at home. However, if you want bouts of flavours and spiciness in your noodles, you don’t have to put in extra efforts. Make these quick and easy schezwan noodles.

Schezwan or Sichuan food is an important part of Chinese cuisine, which finds its roots in the Sichuan Province. Schezwan food is known for its prominent flavours and high spice level coming from Sichuan pepper and chilli peppers. You can make Schezwan noodles at home easily; all you have to do it is get Schezwan sauce, which is easily available in grocery stores. You can also make Schezwan sauce at home with this recipe, and store it.

Schezwan sauce is spicy and full of flavours. 

Easy Schezwan Noodles Recipe –

Ingredients – 

1 Hakka noodles packet
2-3 tbsp schezwan sauce (store-bought or homemade)
Half cup spring onion, chopped
2 tbsp spring onion leaves, chopped
Half cup grated carrot
Half cup grated cabbage
Half cup capsicum, finely chopped
1 tbsp ginger-garlic paste
Salt and black pepper to taste
1 tsp vinegar
Half tbsp. soy sauce
Method – 
Step 1- Boil water, add salt and 1 tsp oil and boil noodles.
Step 2 – Meanwhile, heat oil in a pan, add onions and ginger-garlic paste. Cook till onions they turn translucent.
Step 3 – Add schezwan sauce and saute for a minute.
Step 4 – Add the veggies. Add some salt and pepper. Remember, schezwan sauce already has salt and spice.
Step 5 – Check the noodles, if they are cooked, strain them, run through cold water and spread them in the strainer. Add some oil to keep them from sticking to each other.
Step 6 – Saute the veggies till they cook. Don’t overcook the veggies if you want crunch in the noodles. 
Step 7 – Add the noodles to the veggies. Add soya sauce and vinegar. Mix well and turn off the gas. Garnish with spring onion greens.

Your spicy, flavourful Chinese noodles are ready. You won’t need any sauce separately to go with it. The flavours of hot Schezwan sauce in the noodles will make it a delightful meal in itself.
