This quick and easy recipe gives a very ‘desi‘ makeover to mushrooms, turning them into crispy, spicy, fried nosh that no one can refuse.

Mushroom 65 is easy to make like any other fried paneer or aloo snack you’ve been making. Mushy mushrooms offer a distinct texture and taste, and when smeared with a spiced batter and deep-fried, they turn into a delicious, crunchy tea time snack. Mushroom 65 is commonly made in south India, especially in Kerala, and is called Kalan 65 in regional lingo.

Mushroom 65 recipe –

Ingredients –
8-10 mushrooms
1 tbsp all-purpose flour (maida)
1 tbsp rice flour (for crispiness)
1 tbsp cornflour
1 tbsp ginger-garlic paste
Salt to taste
Red chilli powder to taste
1 tsp garam masala powder
A pinch of cumin powder
1 tsp chaat masala
1 tsp lemon juice
Coriander leaves for garnishing

Method –
Step 1 – Wash all the mushrooms and cut off the dark base of the stalk. Don’t cut the mushroom buttons. Let the mushrooms dry.
Step 2 – Combine all-purpose flour, rice flour and cornflour. Add salt, ginger-garlic paste, red chilli powder, garam masala and cumin powder.
Step 3 – Add some water to make smooth batter but make sure it’s not too fluid. It should be thick enough to coat the mushrooms properly.
Step 4 – Dip all the mushrooms in the batter and carefully coat all the mushrooms with the batter without breaking them.
Step 5 – Heat oil in a deep vessel. When the oil is hot enough, but not too hot, drop the coated mushrooms and fry till then turn brown and crispy. Remove from oil and place on absorbent paper so that it soaks excessive oil.
Step 6 – Garnish the mushrooms with lemon juice, chaat masala and coriander leaves and serve.

Mushroom 65 goes best with pudina or dhaniya chutney but you can choose to pair it with tomato sauce or even coconut chutney.
