As children, our visits to temples were quite exciting – the sight and taste of the bright orange coloured boondi prasad was a good enough reason to convince us to accompany our parents. The juicy, airy boondi is as delicious as any other popular Indian dessert. Typical halwai-style boondi can be made at home with gram four but it is a time-consuming job. We have a quick and easy recipe for you that will help you make your favourtie meethi boondi in all of 5 minutes.

The instant sweet boondi recipe was posted on YouTube channel ‘Cook With Parul’. Whenever you are left with excessive sugar syrup, you can use it to make boondi instead of throwing it away. But, that doesn’t mean you can’t make it from scratch because that too would take only a couple of minutes to prepare this yummy and juicy market-like boondi.

Make sugar syrup by boiling sugar in water till you get a thick syrup; you can also add some milk for extra flavour or if you feel your sugar is not clean. While boiling, add kesar (saffron), elaichi (cardamom powder), rose essence and kesar food colour that will render the same orange colour we see in boondi prasad, however, it is completely optional. When you feel the syrup has thickened and turned sticky, add some lemon juice. Turn off the gas and let the syrup cool down a bit. Then, get raw boondi without flavour and simply pour it in the sugar syrup and mix well. Gradually, boondi will soak in the flavour and colour of the syrup, and will also rise and puff up.
